Black-bean Corn Salad
Dances With Smoke BBQ
1 can black beans, drained
2 ears corn, boiled or roasted (cut kernels off cob after cooking)
3 cloves garlic, minced
1/2 cup diced sweet onion
1/2 cup diced red pepper
1 teaspoon salt
1/2 cup extra virgin olive oil
1/4 cup lime juice (or 1/2 cup fresh lime juice)
2 teaspoons cumin seed (or 1 teaspoon ground cumin)
handful fresh cilantro, minced
handful fresh parsley, minced
1 teaspoon dried red pepper
1/2 teaspoon ground black pepper

Mix all ingredients together, cover and chill.
