Cabbage Salad with Peanuts

1 head cabbage, chopped
Crushed red pepper to taste
1/2 cup peanuts
1/2 cup minced fresh cilantro

dressing:
1/4 cup peanut butter
1/2 cup hot water
1/2 cup cider vinegar
3 tablespoons brown sugar
1-1/2 teaspoons salt
1 tablespoon soy sauce
1 teaspoon sesame oil

Mash peanut butter & hot water together until smooth.  Mix in vinegar, sugar,
salt, soy sauce and sesame oil.  Add to cabbage in three increments, mixing well
after each.  Add crushed red pepper and cilantro.  Cover bowl tightly and
refrigerate for 12-24 hours, stirring occasionally.  Sprinkle peanuts on top just
before serving.
